Go ahead, eat dessert first!

Hey friends, I have several recipes to share so I'll get right to it. As the saying goes-- "Life is uncertain. Eat dessert first." I have a great Easter-themed dessert recipe that you've got to try before next Sunday. The recipe is Cadbury Mini Egg Blondies. The recipe had me at Cadbury Mini Eggs, not sure about you! Anyway, I made these last year around Easter and Britt requested I whip up a batch today before we left for Atlanta. Once you try these you'll be glad that Cadbury Mini Eggs are only available about 6 weeks a year!
Cadbury Mini Egg Blondies
 Ingredients:
2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tbs vanilla extract
1 egg
1 egg yolk
2 cups Cadbury Mini Eggs
Sift flour, baking soda, and salt together in a medium mixing bowl. 
Melt butter in a microwavable safe bowl. 
 
Add sugars to melted butter and cream together with an electric mixer. 
 Add eggs and vanilla and mix until creamy. 
 
Add to flour mixture and mix well. 
 Add chocolate eggs and stir well. 
 Spray baking pan with cooking spray. Pour batter into an 8x8 or 9x9 baking pan. Bake at 325 degrees F for 40 minutes or until a toothpick is inserted in the middle and comes out clean. Wait 30 minutes for blondies to cool, then slice and enjoy.

Next up is a new spin on meatloaf. Britt found a recipe that he thought looked good in Eating Well magazine. If you like cheeseburgers and you like meatloaf this recipe might be for you! To be honest, I thought I was not going to like this version of meatloaf. The picture in the magazine really didn't look all that great. It looked a little dry. I guess I have a special touch for making meatloaf because mine always turns out very moist and {not to sound braggadocios} quite tasty. After I made it I was pleased with the results! 
Bacon Cheeseburger Meatloaf
Ingredients:  {I cut the recipe in half}
1 large yellow onion
8 ounces mushrooms
2 garlic cloves
1 tbs olive oil
4 strips of bacon, divided
5 tbs ketchup, divided
1/4 cup dill pickle relish 1 tbs Worcestershire sauce
1 large egg, lightly beaten
3/4 cup breadcrumbs
2 pounds ground beef
1/2 cup shredded cheddar cheese {I always use more!}
Chop the onion, garlic, and mushrooms.
 Saute the mixture in the olive oil until it is tender. Transfer to a medium sized mixing bowl. 
Chop bacon and add it to sauteed mixture. Add dill relish, 3 tbs ketchup, and Worcestershire sauce. 
 Mix well. 
 Add bread crumbs and eggs and stir together. 
 Add ground beef and mix together well. 
 Shape mixture into a loaf pan. Add remaining ketchup and spread over meatloaf. 
 Top with shredded cheese and bacon.
 
Bake at 375 degrees F for about 45 minutes. Let stand for 10 minutes before serving. Serve with homemade mashed potatoes! Delicious! 

Switching "themes"...I have been dying to try this oven baked taco recipe I found on Pinterest a while back. I finally got around to making them one day last week. We loved them. 
Oven Baked Tacos
Ingredients:  {I cut this recipe in half}
2 pounds ground beef
1 small onion, diced 
1 small can diced green chiles
1 packet taco seasoning
1 8oz can tomato sauce
1 16 oz can refried beans
Jalapenos
2 cups shredded cheese 
18-20 hard taco shells {we only made 5 tacos and had a lot of meat mixture left to make tacos for lunch later in the week}
For topping: salsa, sour cream, and guacamole
Dice onion and add to ground beef. Cook until no longer pink. 
 Drain meat and return to skillet. Add green chiles, refried beans, tomato sauce, and taco seasoning to the meat. Stir until mixed well. 

 Put taco shells in baking dish and spoon meat mixture into taco shells. 
 Top with jalapenos and shredded cheese. 
 Bake at 400 degrees for 10-12 minutes. We just had some chips and salsa on the side! I definitely see this meal in our future. 

The last recipe is SO easy! I wanted a different spin on spaghetti so I found a pasta recipe that looked good and decided to add chicken to make a meal out of it. I like to call it chicken spaghetti...
Chicken Spaghetti
Ingredients: 
1 pound Chicken, grilled
6 oz Spaghetti noodles
Cherry tomatoes, cut in half
Garlic, minced
Black olives, chopped, 
Feta cheese
Salt and Pepper
Parsley
6 tbs olive oil 
Throw the chicken on the grill until it is cooked through. 
 Put noodles on to boil {according to package directions} and chop tomatoes and garlic. Once chicken is cooked, chop into 1 inch pieces. Saute garlic in olive oil for about 3-4 minutes. 
 Drain noodles and put them in a bowl. Add chicken, tomatoes, garlic and olive oil mixture, olives, feta cheese, salt, pepper, and parsley. Toss until mixed well. Serve with bread, or a salad, or both! This made great leftovers, too.
